Finnish Kropsu (Baked Pancake)

While visiting my sister-in-law, she served Finnish Kropsu or Baked Pancakes for breakfast. It turns out she got the recipe from my sister. This is a favorite recipe for holidays, family gatherings, or an easy mix for the morning.

Finnish Kropsu (Baked Pancake)

My sister found this recipe, who gave it to my sister-in-law, and it is now part of their favorite Christmas traditions, or potluck favorite, or guests are over let's make a quick pancake.

Equipment

  • 9"x13" baking dish
  • Medium mixing bowl
  • Whisk
  • Measuring spoons and cups

Ingredients
  

  • 3 each eggs
  • 1/2 C sugar
  • 2 C milk
  • 1 1/4 C flour
  • 1 tsp salt
  • 1/4 C butter melted

Instructions
 

  • Preheat oven to 375 degrees. Mix all ingredients in a bowl, except butter. Beat until blended with a whisk. It will be very thin. Melt butter in 9"x13" pan. Take half of melted butter and add to batter. Pour batter over hot butter and bake at 375 degrees for 30 minutes.
    It will puff up in baking. A fun part of this recipe is watching it deflate!
    Serve with yogurt, jam, jelly, syrup, or honey. Cut in squares to serve.
